This Vallisto Extremo Malbec is Francisco’s most popular wine. A Malbec made in an elegant style with only very light oaking (50% of the wine in small oak casks for 12 months).
Like all his wines he uses natural methods with no pesticides etc in the vineyard, no manipulation in the winery either and only very minimal SO2. Hand picked grapes of course.
Opaque ruby in colour. Juicy red fruit on entry with good acidity from the high altitude vines. Midweight on the palate and balanced with a long dry finish and very smooth.

CAFAYATE VALLEY
We were searching for freshness and silky tannins, while preserving the features of the fruit from Cafayate. This vineyard if located at 1900 meteres above sea level on the Western hillside of the Cafayate Valley within the San Luis revine. The vineyard has intrusive granite rock soil. Vallisto Malbec expresses this place with freshness and elegance.
VINEYARDS:
The vineyards grow on rich loamy soils with a deep rocky subsoil, on the Western slope of Mount Punta Alta, which
protects them from excessive sun exposure. Standing at more than 1,900 metres above sea level, the vineyard benefits from the coolness afforded by high altitudes, even during heat waves.
WINEMAKING:
The grapes were hand picked in 20 kg baskets. The wines is fermented with native yeasts. We naturally let the wine
finish malolactic fermentation. Then, 50% free run wine is aged for 12 months, using 225 and 500 liter French barrels hand crafted with oak from the Allier forest with a very soft toast. The other 50% of the wine is aged in concrete vats, also for 12 months.
