The grapes are harvested exclusively by hand allowing a sorting on stump by the harvester. 80% in traditional winemaking and destemming. After 9 days of vatting at a temperature of 30 ° C and aging, our oenologist proceeds to the assembly. 20% carbonic maceration to extract the maximum fruit.
