Waipara Springs Sauvignon Blanc

Waipara is technically in Canterbury roughly 50 miles north west of Christchurch. You can cut down from Marlborough rather than taking the coast road and it's a stunning drive. It's these valleys which are producing a more mineral style of Sauvignon over the really fruit forward versions from the Marlborough plains.
Notes on the 2014 state:
Fruit was harvested from our 24 year old Sauvignon Blanc vines and from our younger Church Road block. Upon arrival at winery the fruit was pressed to tank and the juice allowed to settle for a period of 48 hours. The clear juice was then racked to tank and large format oak barrels, warmed and inoculated with a selected yeast strain proven to enhance varietal aromatics. The juice fermented in barrel was stirred fortnightly post ferment for two months to encourage the development of texture and richness.
This wine displays punchy herbaceous characters of nettle and passionfruit with a touch of tropical fruit on the nose. It is juicy and lively on the palate whilst still having superb balance, texture and concentration coupled with chalky minerality.
