Salice Salentino Riserva DOC Leone de Castris
Just moved onto the 2015
Leone de Castris is one of the region's top wineries, established in 1665. They make some excellent wines which are great value. The previous vintage was awarded Tre Bicchieri by Gambero Rosso. Fantastic value wine.
Vinification: 90% Negroamaro and 10% Malvasia Nera di Lecce grapes harvested at the end of September from vines with an average age of 40 years (Apulian head training with 7,000 vinestocks per ha). The grapes are soft pressed at the winery and separated from the stalks. They are fermented in stainless steel tanks for 12 days. This is followed by maceration for 12 days (racking, pumpovers and aeration ). The wine is then transferred to 30HL French oak barrels (approx 5 years of age) and aged for 12 months. The wine spends a further 12 months in bottle.
