Vinification: Bunches are harvested manually and once they reach the wine-cellar gently pressed. Then, a slow fermentation takes place in steel tanks with indigenous yeasts. After racking the wine, the sparkling wine production process begins in autoclave. This is known as the 'Charmat' method.
