La Selva Organic Tins'vil Spumante Brut. A sparkling organic wine made by the charmat method of fermentation in tank, the same as Prosecco, rather than the champagne method of fermentation in bottle.
This wine is special as it is actually made from the red Sangiovese grape!

This is a new wine for us from La Selva. It's a "blanc de noir" - a white sparkling wine made from the red Sangiovese grape. We love their still Sangiovese Bianco and it sells really well for us. We expect this to do similar. Obviously, like all their wines, it's fully organic and extremely low in sulphites (just 8mg/l free SO2). Below is text from their website.
Balanced and elegant, beautiful liveliness, dynamic, complex and creamy, fine and persistent, driven by a good perlage , with pleasant floral note and yellow fruits , bread crust and almonds , good flavor and freshness.
At low temperature, vinificated in steel tank.
6 months "sur lies" and at least 3 months in bottle before release.
